Man Food: Fiery Fish Tacos
The man of the house made these awesome Fiery Fish Tacos with Mango & Avocado Salsa earlier this week. The recipe is out of an old issue of Men’s Health Magazine. The recipe is not posted on their site (bummer), but this similar recipe is posted.
The picture doesn’t do this meal justice. He grilled/blackened the […]

Jodi’s Baby Shower
I’m still working at a summer pace (read: lazier than usual). We gathered last weekend to help J & J prepare to welcome their first child. I had a great time…and as far as I know, everyone survived the 100 degree weather. Pictures are posted in the Shutterfly collection.

MMM=Memorial Day Madness
I have been MIA lately - busy with work and spending more time outside in the warm weather, leaving less time for the bloggy blog. I just posted my pictures from the recent Memorial Day weekend trip. I’m going to harass HZ for her pictures because I think she has the best ones.

Vegan Express Chana Masala
I could eat curry every night. Seriously, this nerd does not lie. Ask my husband who has a way of subtly recommending that our dinners have more variety. But at least once a week, I get my fix. This week I made a super quick version of Chana Masala from Vegan Express. I served it […]

Hey Mama…this that beat that make you groove mama!
Get on the floor and move your booty, mama. That song just popped into my head when I started thinking about Mother’s Day. On Sunday, we celebrated Mother’s Day with my mom and my BFF (my mother-in-law). I still need to catch up with GB and DR. Once again, I forgot to take pictures, well […]

More Weeknight Quickies from Vegan Express
Since the first recipe I tried from Vegan Express was a hit, I decided to try 2 more.
Last week I made Tortilla Casserole. Most ingredients were canned or frozen making it super easy to prepare. I accidentally added more crushed tomatoes which made my casserole a little soupy. I will use the correct amount next […]

Miso-Glazed Fish & Somen Salad
I tried some new things this week. Wednesday I tried steaming artichokes for the first time. I totally overcooked them but I learned a lot, so I’ll cook them better next time. My mom made these for us as a kid and I’ve always enjoyed them plain or dipped in salad dressing.
Thursday night, R and […]

Pound Cake for Easter
I made and bought a bunch of food items for our annual Easter trip to visit family. After reading so many favorable review of Veganomicon’s Vanilla-Yogurt Pound Cake, I knew I had to try it. It did not disappoint. I attempted to not mention that this pound cake was vegan..but I cracked when someone said […]

St. Patty’s Day Treat
Today I made vegan/dairy-free Irish Soda Bread from the most recent issue of VegNews. It was nice to have a sweet snack to celebrate St. Patrick’s Day and our Irish heritage. Happy St. Patrick’s Day!

Take this Awareness Test
The friendly pirate stumbled upon this cool site today. Watch the video and take the test if you have a chance. It makes me think about a lot things…cyclists, security, health, and life in general.

Ethiopian-Inspired Delight!
Thanks to Susan at Fat Free Vegan Kitchen for yet another wonderful recipe. Here’s proof that I like spices other than curry. I made Ethiopian-Inspired Red Lentil Soup on Tuesday. Holy Moly it was good. Flim Flam it was good! I didn’t mix my own Berbere, I found it at World Market. I’d never used […]

Classic Sunday Family Dinner: “Meat”Loaf & Greens
Okay, so you probably guessed that it isn’t a real meatloaf but pretty darn close! It has been cold around here lately and I haven’t cooked a good old fashioned Sunday Dinner in a while. Steph mentioned she might be around for dinner so I pulled out this recipe for Lentil Loaf that I had […]

Weeknight Dinner Catch-Up & Wrap-Up
Monday I made Polenta with Black Beans and Spinach from Vegan Express. True to its name, it was express - it took me about 20 minutes total to make. We’ve had that tube of polenta in the pantry for a while now, so I was happy to use it and I enjoyed grilling the polenta. […]

Mysteriously Good Together: Sweet Potato & Black Beans
Wednesday night I ended up working late so my handy husband cooked up Navajo Stew (Adaption of Moosewood Recipe) from another favorite blog, Albion Cooks. I don’t know why sweet potatoes and black beans taste good together, but another good use of this combo is posted here. This recipe had the perfect level of […]
