Vegetables, Fruits, & Legumes - Oh My!

I recently read a health book and learned a few things I already knew. Well, I already knew that Americans don’t eat enough fruits and vegetables and that most people eat a too much meat and white pastas and rices. But after reading real medical studies and learning that there is a scientific consensus that American cancer, diabetes, and heart disease rates are linked to the overconsumption of animal proteins and the underconsumption of fruits and vegetables (important nutrients)…I was really floored. If you know me, you know I am moderate by nature so there is little chance I will become a vegan anytime soon, in fact, I am not sure if I could committ to being a vegetarian…but I am newly committed to eating more vegetables and changing my dinner recipes to balance vegetable and meat dishes. I am also trying to change my own mindset and my family’s mindset to believe that vegetables can be a main course. The book explains that a major part of the problem is cultural, Americans tend to focus their meals around meat instead of focusing their meals around important nutrients that the body needs. Since I read the book, I’ve made at least one ‘vegetarian’ meal per week.
Tuscan Skillet Supper (Vegetarian)
Last night, it was Cooking Light’s Tuscan Skillet Supper. I would consider this a repeater, but not Robby, he’s still adjusting to the idea that you can have a yummy fulfilling meal with no meat. Sunday and Monday were both veggie only, so the rest of the week we’ll have chicken & fish.
