Spaghetti Squash-and-Vegetable Gratin (Vegetarian)
Friday night I wanted to make something healthy and warm so I tried a new recipe, Spaghetti Squash-and-Vegetable Gratin, from Cooking Light. This is one of those dishes that doesn’t look that appealing, but tastes really good. I’ve only made spaghetti squash one other time and I forgot how much fun it is to scrape the squash and watch spaghetti strands appear. I took pictures of the different layers; spaghetti squash is the bottom layer, the mushroom/tomato mixture is the middle layer, and then it is topped with a breadcrumb/mozzarella mixture. There were plenty of leftovers, too. Repeater!
